Winemakers Note

About - Since 1930, Mouton Cadet has been renowned for its exacting standards and audacity. The fruit of generous Nature and the work of human hands, the result of the encounter between an exceptional terrior and the passion of Baron Philippe de Rothschild (1902-1988), over the years Mouton Cadet has consistently combined quality, prestige and know-how in an expressive, seductive way. Today, Mouton Cadet has become the worldwide reference for Bordeaux Appellation d'Origine Contrôlée wines.

Mouton Cadet Rouge is made from rigorously selected wines and grapes form partner winegrowers in the main appellation of Bordeaux and the Côtes. Baron Philippe de Rothschild's winemakers monitor the winegrowers anad advise on vineyard practises in order to meet the exacting quality standards of Mouton Cadet.

Appellation - The appellation takes its name form the town of Saint-Émilion, a few miles east of Bordeaux. Its vineyards are some of the most prestigious of the Bordeaux region.

Soil - The terroir is divided into two distinct zones: The clay-limestone soil of the Côtes gives round and fruity Merlots, while the sandy, flinty gravel of the Sable allows the Cabernets to reach optimum maturity

Vintage Conditions-  A very cold winter, a dry, cool spring wihch favoured the emergence of a plentiful crop ended with a wet June. Fortunately the summer weather was ideal, with high temperatures and plenty of sunshine. A very hot July and a fine August got the ripening process off to a good start, with the grapes showing great aromatic potential. Despite some rainfall in September, 2010 remains a hot-weather vintage, producing small and highly concentrated grapes.

Grape Varieties - 80% Merlot, 10 Cabernet Sauvignon and 10% Cabernet Franc

Fermentation/maturation - Pre-fermentation maceration at low temperatures to favour expression of the fruit and a short period of maceration after fermentation to release elegant tannins. Produced in limited quantities, this Saint-Émilion wine is matured at the Saint-Laurent-Médoc winery where it is treated with meticulous care in order to preserve all its aroma and flavour and typical Médoc style.

Alcohol - 14 %

Residual Sugar - g/L

Acid -  g/L
