Winemakers Note

About -  At the time of Tahbilk’s very early beginnings in 1860, one of Tahbilk’s founding fathers, John Pinney Bear placed an advertisement in leading newspapers across Australia asking for ‘One million strong vine cuttings’. His advertisement was reasonably successful with Tahbilk receiving around 600,000 cuttings and by the end of 1860, 26 hectares of vines planted. This historic advert was the inspiration for this range of wines which have been crafted from grapes sourced from other Central Victorian vineyards owned by Tahbilk.

Region - South Eastern Australia, sourced from our vineyards in the Goulburn Valley.

Grape Varieties -  This wine was crafted from 100% Chardonnay grapes,

Fermentation / maturation -   Grapes were picked and crushed to retain their fresh, varietal flavours. The juice was then divided into select parcels. Each parcel underwent a different treatment such as malolactic fermentation; fermentation and time with French oak; or spending an extended period on yeast lees. Each treatment resulted in an individually flavoured parcel of wine, and the unique character and personality of the final blend is a result of the special handling of these separate parcels.

Alcohol - 14.0%

Residual Sugar -  g/L

Acid -  5.6g/L

Tasting Notes -  Lovely, varietal honeydew melon and peach fruit characters all working in symmetry along side the toasty French and American oakt. A stylish, elegant and balanced wine sure to impress.

Recommendations:  A wonderful accompaniment to char-grilled seafood or light salads.
